Sourdough, Cheese and Spring Onion Strata

Serves 3-4

50g Butter, melted

1/2 Loaf sourdough, cut into 5cm cubes

5 Spring onions, finely sliced 

200g Gruyere cheese, grated

50g Parmesan, grated

Black pepper

4 eggs

310ml Milk

1tsp Dijon mustard

1/2tsp Salt


1. Brush the inside of a baking dish with melted butter. Place the sourdough cubes in a large bowl and pour over the remaining butter. Place half the sourdough in the base of the baking dish and scatter with half the spring onion and half the grated cheese. Repeat with another layer of bread cubes, spring onion and cheese.

2. Whisk the eggs, milk, Dijon mustard and salt together and pour over the bread and cheese. Cover with clingfilm and refrigerate for at least two hours.

3. After that, heat the oven to 180c. Remove the clingfilm and bake the strata uncovered for 40-50 minutes, until the centre is set. Cool for 15 minutes before slicing and serve with freshly ground black pepper.
